When the tea plant thinks spring has come early, it sends out shoots which are harvested to make this special bumper crop tea. Produced in Nantou County from the Four Seasons (si ji chun) cultivar, this Dong Pian is amazingly balanced and beautifully floral. Often, early si ji chun harvests are very intensely floral, but when it is sufficiently oxidized - as in this production - the leaves mellow and sweeten a bit to produce a truly exceptional cup that mimics the transition from winter to spring.Ā
